  • 1 large Granny Smith apple,cored (chopped)
  • 3 cm piece ginger (finely grated)
  • 1 large brown onion (thinly sliced)
  • 1/4teaspoons chilli flakes
  • 1 1/2tablespoons ground coriander
  • 1tablespoons ground cumin
  • 1teaspoons garam masala
  • 2teaspoons ground turmeric
  • 1 cup salt-reduced chicken stock
  • 1 cup Greek-style yoghurt
  • 1 cup tomato passata
  • 3 cups basmati rice (to serve)
  • 2tablespoons vegetable oil
  • 1kilograms chicken thigh fillets (cut into 3cm pieces)
  • 1 handful mint leaves (to garnish)
  • 4 cloves garlic, crushed

Method

Step 1 of 3

Heat vegetable oil in a deep frying pan or saucepan over medium heat. Add onion, garlic, ginger and spices. Cook for 5 minutes, stirring often, or until onion is soft, lightly browned and fragrant.

Step 2 of 3

Stir in passata and stock, then increase heat to medium-high and bring to the boil.

Step 3 of 3

Add chicken to pan and cook for 10 minutes. Add apple and cook for a further 5 minutes or until tender. Stir in masala and season. Serve with yoghurt, rice and mint leaves.
