  • 1 The Spice Tailor Keralan Coconut Curry
  • 1tablespoons olive oil

Description

Dinner is done and dusted with this easy-as, aromatic coconut curry.

Method

Step 1 of 4

Heat olive oil in a medium saucepan over medium heat. Add spices from the spice packet and cook until the seeds pop.

Step 2 of 4

Cook rice as per packet instructions.

Step 3 of 4

Add chicken and cook for 10 minutes or until browned. Add the sauce and cook for a further 3 minutes. Remove from heat, stir through the spinach and leave until slightly wilted.

Step 4 of 4

Spoon curry on top of rice to serve.
