  • 3 rasher rindless bacon, chopped
  • 1/2 cup sour cream (to serve)
  • 5 spring onions, thinly sliced
  • 10 burrito tortillas
  • 500grams turkey mince
  • 400grams can diced tomatoes
  • 1/2 cup quinoa
  • 1tablespoons olive oil
  • 1 1/2 cup tasty cheese, grated
  • 375grams chunky salsa medium

Method

Step 1 of 3

Heat oil in a deep frying pan over medium heat. Add bacon and cook for 8 minutes or until golden. Add mince and stir until combined. Cook, stirring occasionally with a wooden spoon, for 10 minutes or until browned.

Step 2 of 3

Add quinoa, tomato, salsa and 1/2 cup water. Stir to combine. Bring to the boil. Simmer for 10 minutes or until mince and quinoa are cooked through. Add spring onion, reserving 2 tbs to garnish, and cook for 1 minute. Set aside to cool.

Step 3 of 3

Preheat oven to 180°C. Grease a large shallow baking dish. Place a tortilla on a board. Spoon 1/2 cup mince mixture along one edge. Roll up to enclose filling. Transfer to baking dish. Repeat with remaining tortillas. Sprinkle with cheese. Bake for 20 minutes or until golden. Serve with sour cream, sprinkled with reserved spring onion.
