Spicy Lamb & Beet Pizza

  • 1 small Lebanese cucumber
  • 1 small eggplant, thinly sliced
  • 2tablespoons mint leaves (to garnish)
  • 1 onion, chopped
  • 1 small beetroot, shredded
  • 5milliliter virgin olive oil spray
  • 2 traditional pizza bases, cooked
  • 1 1/2teaspoons ground cumin
  • 1teaspoons smoked paprika
  • 1/3 cup hummus (see tip)
  • 1/2 cup Greek-style yoghurt
  • 300grams lamb mince
  • 1tablespoons olive oil

Method

Step 1 of 4

Heat oil in a frying pan over medium heat. Add onion and cook for 3 minutes or until softened. Stir in cumin and paprika. Add mince and cook for 10 minutes, stirring with a wooden spoon to remove lumps. Season.

Step 2 of 4

Meanwhile, preheat a chargrill over high heat. Spray eggplant slices with oil and chargrill for 2 minutes each side or until charred and tender.

Step 3 of 4

To make the tzatziki, halve the cucumber lengthways and remove seeds with a teaspoon. Grate and place into a bowl. Stir in yoghurt and chopped mint. Season.

Step 4 of 4

Spread hummus over cooked pizza bases. Top with mince and eggplant slices. Drizzle with tzatziki and finish with beetroot and mint leaves, to serve.
