  • 500grams lamb mince
  • 1 medium onion, peeled and diced
  • 1tablespoons olive oil
  • 2 cloves garlic, peeled and minced
  • 1teaspoons ground coriander
  • 1teaspoons cumin
  • 2teaspoons ras el hanout
  • 75grams sultanas
  • 1 1/4 cups chicken stock
  • 6 flatbreads
  • 2tablespoons coriander, fresh, chopped
  • 2tablespoons mint, fresh, chopped

Description

Store bought flatbreads make these spiced lamb flatbreads a quick and easy midweek meal option.
Instruction tip
If you prefer spicy food, add chilli flakes to the lamb mince along with the spices and top the flatbreads with dollops of yoghurt.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced and place the flatbreads on baking trays.

Step 2 of 4

In a large frying pan on a medium high heat, cook the onions and lamb mince for 5 minutes until browned. Add the garlic and spices and cook for 2 more minutes.

Step 3 of 4

Pour over the chicken stock, stir in the sultanas and bring to the boil. Reduce the heat and simmer for 20 minutes, until the lamb is tender and the stock has almost fully reduced.

Step 4 of 4

Divide the lamb mix between the flatbreads and bake for 10 minute. Remove from the oven, sprinkle each flatbread with mint and coriander and serve.
