- 200grams uncooked wheat berries
- 60grams goji berries
- 20grams walnuts, chopped
- 1tablespoons light olive oil
- 2 chicken breasts, diced
- 1 onion, finely sliced
- 1 clove garlic, crushed
- 1 large apple, grated
- 1 pinch salt
- 1 handful flat-leaf parsley, finely chopped
- 1 handful basil leaves, finely chopped
Description
This filling pilaf uniquely combines crisp apple and chewy wheat berries with nuts and sweet berries. Add some tender chicken to the mix and you're left with a healthy and filling meal.
Method
Step 1 of 4
Place the wheat berries in a large saucepan, cover with water, and bring to the boil. Then reduce the heat to a simmer and cook for 30-40 minutes or until they are tender.

Meanwhile, place the goji berries in a small bowl, cover with water, and leave to soak for 10 minutes. Heat a large frying pan over a medium heat. Add the walnuts and lightly toast for 3-4 minutes. Remove from the heat and set aside.

Increase the heat to medium-high and pour the oil into the pan. Add the chicken and cook for 10 minutes, stirring frequently. Then add the onions and garlic to the pan. Cook for a further 5 minutes, stirring occasionally, until the chicken is cooked through and the onions have softened. Remove from the heat.
Step 4 of 4
Drain the wheat berries, add them to the pan, and mix to combine with the chicken and onions. Drain the goji berries and discard the water. Add the goji berries, walnuts, and apples to the pilaf and mix lightly to combine. Taste and adjust the seasoning, if needed. Garnish with the herbs and serve hot.
