  • 900grams Woolworths BBQ Lamb Kebabs with Honey & Mint
  • 1 lemon, juiced
  • 320grams mix-a-mato tomatoes, halved
  • 3 cups Farmers Union Greek Style Yogurt
  • 2 Lebanese cucumbers, thinly sliced
  • 1/4 bunch mint, leaves picked
  • 6 wholemeal Lebanese bread rounds

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Combine chickpeas, paprika and 1 tsp oil in a bowl. Place on tray and season. Bake for 20 minutes or until golden.

Step 2 of 3

Meanwhile, remove meat from skewers, then roll meat from each kebab into 2 balls. Heat 1 tbs oil in a large frying pan over medium heat. Cook kofta in 2 batches, turning, for 5 minutes or until cooked through. Transfer to a plate and cover to keep warm.

Step 3 of 3

Combine lemon juice, tomato and remaining oil in a medium bowl. Season. Spread bowls with yogurt, then top with tomato mixture, cucumber, kofta, chickpeas and mint. Season with pepper. Serve with bread.
