  • 1/2 bunch coriander
  • 1/2 bunch parsley
  • 3 clove garlic, chopped
  • 3/4teaspoons paprika
  • 3/4teaspoons ground cumin
  • 3/4teaspoons ground coriander
  • 1 lime, juiced
  • 1teaspoons salt
  • 1tablespoons ginger, chopped
  • 3/4 red chilli, chopped
  • 1 drizzle olive oil

Description

Delicious flavoursome bbq chicken.
Instruction tip
I normally make the chicken in the morning before work and let it marinate for the day.

Method

Step 1 of 7

Cut chicken into pieces (whatever / however many cuts you want). This recipe also does well as at flat half chicken but will take longer to cook.

Step 2 of 7

Coat the marinade over the chicken and marinate for at least 1 hour.

Step 3 of 7

Once done marinating, drizzle chicken with olive oil ready for cooking.

Step 4 of 7

Heat up the bbq with a grill side until it's quite hot.

Step 5 of 7

Cook the chicken, skin-side down, for 10 minutes, then turn it over and cook for a further 10 minutes or until cooked through.

Step 6 of 7

Serve chicken with lime wedges and a fresh salad

Make the marinade - combine parsley, coriander, garlic, ginger, lime juice, chilli, salt, ground cumin, ground coriander into a mortar and pestle and grind til combined.
