- 1 pinch ground white pepper (to taste)
- 3 tomatoes, seeds removed, diced
- 2 small Lebanese cucumbers, seeds removed, diced
- 1/2 sweet crunch lettuce, shredded
- 1 cup mint, leaves roughly chopped
- 1 small brown onion, grated
- 1 cup parsley, leaves roughly chopped
- 5milliliter virgin olive oil spray
- 2teaspoons ground coriander
- 3teaspoons ground cumin
- 1 lemon, 2 tbs juiced
- 90grams almond dukkah
- 2tablespoons olive oil
- 500grams chicken mince
- 1 white pita bread
- 1 pinch sea salt ground (to taste)
Method
Step 1 of 4
Preheat oven to 200°C. Put bread on a baking tray and spray both sides with olive oil. Bake for 10 minutes or until crisp. Cool. Break into pieces and set aside.
Step 2 of 4
Combine mince, onion, cumin and coriander with salt and white pepper in a bowl. Roll 3 teaspoonfuls of mixture into balls. Place onto a tray. Place dukkah in a shallow dish. Coat meatballs in dukkah.
Step 3 of 4
Heat oil in a large frying pan over medium heat until hot. Add meatballs and cook for 10 minutes, shaking pan often to brown evenly. Transfer to a baking tray and place in oven. Bake for 10 minutes or until cooked through.
Step 4 of 4
Combine lettuce, tomato, cucumber, parsley, mint, oil and lemon juice in a bowl. Season well. Add bread pieces just before serving. Toss until combined. Serve meatballs with fattoush.
