  • 1/2 cup parmesan (finely grated)
  • 2 La Molisana Pastificio Extra Di Lusso egg tagliatelle no 203
  • 500grams Italian style fennel pork sausages
  • 1 small brown onion
  • 1/2 bunch continental parsley, leaves picked
  • 2tablespoons extra virgin olive oil
  • 1 cup chicken stock
  • 800grams diced Italian tomatoes
  • 1/2 cup dry white wine

Description

Learn how to achieve the rich and full-bodied flavour of ragu in only 30 minutes with this easy pasta recipe. This pork and fennel ragu is the ultimate comfort food.

Method

Step 1 of 4

Heat oil in a large, deep frying pan over medium heat. Add sausage mince, then cook, breaking up mince with a wooden spoon, for 5 minutes or until browned. Using a slotted spoon, transfer mince to a plate, reserving oil in pan.

Step 2 of 4

Add onion and cook for 2 minutes or until softened. Return mince to pan, and add wine and stock. Simmer for 3 minutes or until slightly thickened. Add tomatoes and cook, uncovered, for 15 minutes or until slightly thickened. Season.

Step 3 of 4

Meanwhile, cook pasta in a large saucepan of boiling salted water according to packet instructions. Drain, reserving 1/2 cup cooking liquid.

Step 4 of 4

Add pasta, parmesan, half the parsley and reserved cooking liquid to pan. Toss to combine. Serve ragu sprinkled with remaining parsley and extra parmesan.
