  • 300grams chicken breast, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, crushed
  • 2centimeters piece ginger, finely chopped
  • 1 small capsicum, thinly sliced
  • 1 zucchini, cut into batons
  • 2tablespoons soy sauce
  • 2tablespoons sweet chilli sauce
  • 2tablespoons coriander leaves, chopped
  • 2tablespoons peanuts, roasted (to garnish)
  • 250grams Uncle Bens lightly flavoured coconut rice

Method

Step 1 of 4

Heat half the oil in a large frying pan or wok over high heat

Step 2 of 4

Season chicken with salt and pepper and stir fry until just cooked through. Remove and set aside

Step 3 of 4

Heat remaining oil in the same pan. Add onion, garlic, ginger, capsicum and zucchini. Stir fry until onion is tender. Return chicken to pan with sauces and stir to combine

Step 4 of 4

Cook rice according to packet instructions and divide among serving bowls. Top with stir fry and garnish with coriander and peanuts
