- 800grams chicken thigh fillets, diced
- 1tablespoons fish sauce
- 440grams thin egg noodles
- baby bok choy, steamed (to serve)
- 2tablespoons coriander leaves, to garnish (to garnish)
- 1tablespoons sambal oelek
- 1 lime, cut into wedges (to serve, optional)
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 garlic cloves, crushed
- 2tablespoons vegetable oil
Method
Step 1 of 4
Combine honey, soy, oil, sambal oelek, fish sauce and garlic in a bowl. Add chicken and stir until combined. Cover and marinate for 1 hour or overnight if time permits. Thread chicken onto small skewers.

Heat a chargrill over high heat. Cook skewers for 10 minutes or until charred on all sides and cooked through.

Meanwhile, bring a saucepan of water to the boil. Add bok choy and cook for 2 minutes or until just tender. Lift out with tongs and drain. Add noodles to boiling water and cook for 2 minutes or until separated. Drain.
Step 4 of 4
Arrange noodles on plate, top with bok choy and skewers. Garnish with coriander and serve with lime wedges, if using.
