Method
Step 1 of 4
Combine mince, chopped spring onion and tom yum paste in a bowl. Mix well and roll into tablespoon-sized meatballs.
Step 2 of 4
Heat oil in a large frying pan on high heat. Cook meatballs, turning often, for 10 minutes or until brown on all sides and cooked through.
Step 3 of 4
Meanwhile, to make the tom yum mayo, whisk mayonnaise, lime juice and tom yum paste together until smooth.
Step 4 of 4
Cut each baguette in half to make four shorter rolls. Split each through middle without cutting right through. Fill with lettuce, carrot and meatballs. Spoon over tom yum mayo and serve.
