  • 2tablespoons lemon juice

Description

This wrap is great for using up leftover roasted vegetables but it is worth the effort to cook up a big batch especially for this recipe.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Place the sliced vegetables in a roasting tin, drizzle with oil and roast for 30 minutes.

Step 2 of 3

Tip the butterbeans into a bowl, add lemon juice and roughly mash.

Step 3 of 3

Spread the butterbean mash on the wraps, top with crumbled goats cheese and roasted vegetables. Fold up to wrap and serve.
