- 1 medium beetroot, cooked and diced
- 1 medium Roma tomato, diced
- 1 medium avocado, peeled, de-seeded and diced
- 100grams plain flour
- 1teaspoons paprika
- 1teaspoons cracked black pepper
- 500grams halloumi, sliced into 4 large slices
- 2tablespoons canola oil
- 4 medium brioche buns, sliced in half

Description
The salty halloumi in these burgers balance well with the beetroot salsa.
Method
Step 1 of 6
In a bowl, mix together the chopped onion, beetroot, tomato and avocado and set to one side.
Step 2 of 6
In a separate bowl, mix the flour with the paprika and cracked black pepper.
Step 3 of 6
Coat the halloumi slices in the flour mixture and shake off any excess.
Step 4 of 6
Heat up a pan to a medium heat and then add the oil.
Step 5 of 6
Fry the halloumi slices for 6 minutes, flip and fry for a further 6 minutes.
Step 6 of 6
Lightly toast the buns and serve with the burgers and salsa.
