  • 10 Mission Street Tacos
  • 1teaspoons Hass Avocados (to taste)
  • 2tablespoons olive oil
  • 1 red onion, finely diced
  • 2 cloves garlic, finely chopped
  • 1teaspoons ground chilli powder
  • 1teaspoons ground cumin
  • 1teaspoons ground coriander
  • 420grams can chopped tomatoes
  • 425grams can whole black beans, drained and rinsed
  • 1/2teaspoons salt
  • 1 pinch ground black pepper (to taste)
  • 1 cup tasty parmesan cheese
  • 1teaspoons sour cream (to taste)
  • 1teaspoons chilli jam (to taste)
  • 1teaspoons small red chillies , finely sliced (to taste)
  • 1teaspoons spring onions, finely sliced (to taste)
  • 1teaspoons fresh coriander leaves (to taste)

Method

Step 1 of 3

Heat oil in a non-stick fry pan and sauté onion and garlic for 3 minutes until soft. Add spices and cook for a further minute. Add tomatoes and black beans and cook for a further 5 minutes.

Step 2 of 3

Remove from heat and season to taste with freshly ground black pepper and salt. Allow to cool for 15 minutes before using.

Step 3 of 3

Place Mission Street Tacos on a baking paper lined oven tray and top each tortilla with black beans and tomatoes mixture and a generous sprinkle of grated cheese. Bake in a preheated oven of 180°C for 8-10 minutes until the tortilla base is crisp and the cheese is melted. Remove from oven and top with Hass avocados and other desired toppings. Serve immediately.
