- 400grams sweetcorn kernels
- 400grams roasted red peppers (from a jar), drained and sliced
- 1 red onion, finely chopped
- 4tablespoons chopped jalapeno peppers
- 400grams can red kidney beans, drained
- 4tablespoons chopped parsley
- 6tablespoons ready-made salad dressing
- 1 pinch salt
- 1 pinch pepper
Method
Step 1 of 2
Place the sweetcorn kernels in a bowl with the peppers, onion, jalapeno and kidney beans. Scatter over the chopped parsley.
Step 2 of 2
Drizzle over the salad dressing, season, toss to mix well and serve immediately.
