- 375grams penne
- 150grams broccoli florets
- 100grams frozen soya beans
- 100grams frozen peas
- 100grams sugarsnap peas, trimmed
- 150grams soft cheese with garlic and herbs
- 1 lemon, finely grated zest and juice
- 4tablespoons olive oil
- 1 red chilli, deseeded and finely chopped
- 100grams pecorino cheese, grated
- 2tablespoons chopped tarragon leaves
- 1 pinch salt
- 1 pinch pepper
Method
Step 1 of 4
Cook the pasta in a large saucepan following the pack instructions, adding the broccoli florets, soya beans, peas and sugarsnaps for the final 3 minutes of its cooking time.
Step 2 of 4
Drain the pasta and vegetables, saving a ladleful of the cooking water, then tip back into the pan.
Step 3 of 4
Stir in the soft cheese, lemon zest and juice, olive oil, chilli, pecorino, tarragon, some seasoning and a splash of cooking water.
Step 4 of 4
Serve the salad warm or at room temperature.
