- 1tablespoons canola oil
- 2 large eggplant, chopped into strips
- 1 large red onion, peeled and sliced
- 2 large red capsicum, finely sliced
- 1/2 bunch coriander, fresh, chopped
- 1tablespoons chipotle paste
- 1 medium lime, juiced, divided
- 8 tortilla wraps
- 80grams vegetarian hard cheese, grated
Description
These veggie tacos are the perfect meat-free option for Mexican night.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Place the eggplant, red onion and capsicums on a baking tray, drizzle with oil, chipotle paste and half of the lime juice and toss to coat. Roast for 25-30 minutes.
Step 2 of 3
If your tortilla wraps are large, use a round cutter to make small tacos. Wrap in foil and add to the oven to heat for the last 4 minutes of cooking.
Step 3 of 3
Fill the tacos with the veggie mix, squeeze over lime juice to taste and serve with grated cheese and chopped coriander on top.
