  • 80grams sugar
  • 1 2/3 cups water
  • 1 1/4 cups golden syrup
  • 1 star anise
  • 1 medium lemon, juiced and zested
  • 1 medium orange, zest and juice
  • 100grams semolina
  • 600grams dough, fully thawed
  • 100grams dark chocolate chips
  • 100grams dried cranberries

Description

These honey rings are inspired by a traditional maltese recipe but with added sweet cranberries and smokey dark chocolate.

Method

Step 1 of 8

Heat up a saucepan to a medium heat and add the sugar, water, syrup, anise, lemon and orange.

Step 2 of 8

Bring to the boil and then allow to simmer for 15 minutes to let it reduce and thicken.

Step 3 of 8

Add the semolina and stir while cooking for another 5 minutes then remove from the heat, remove the star anise and allow to cool fully.

Pre-heat your oven to 180 °C.

Roll out your thawed dough fully flat and spread your chilled filling evenly over the dough.

Step 6 of 8

Evenly sprinkle the chocolate and cranberries over the sauce. Now roll the pastry into a log as right as your can.

Step 7 of 8

Slice the log into about 12 pieces. Then roll out each ring into a long piece of dough and then connect the ends together to make a ring shape.

Place the rings on a baking sheet and bake for 20 minutes until the dough becomes nicely browned.
