Description

Malpua fried Indian pancakes are delicious studded with raisins and served warm with ice cream.

Method

Step 1 of 3

Mix the flour, sugar, raisins and cardamom powder in a jug. Gradually whisk in the milk to make a smooth batter. Set aside for 2 hours to infuse.

Step 2 of 3

Heat the oil in a large, wide saucepan to 180°C. Drop in pancake size dollops of batter and cook for 2 minutes, flip and cook until golden. Repeat with the remaining batter to make 12 pancakes.

Step 3 of 3

Drain the malpua on kitchen paper and serve warm, scattered with flaked almonds and with a scoop of vanilla ice cream.
