  • 110grams ghee
  • 280grams chickpea flour
  • 3/4 cup milk, chilled, save 3 tsp for later
  • 1teaspoons lemon juice
  • 225grams caster sugar
  • 3/4 cup canola oil, for frying
  • 3tablespoons mixed dry fruit

Description

Ghervar is a crispy Indian treat often made with chickpea flour, dipped in sugar syrup and garnished with dried fruit or nuts.

Method

Step 1 of 4

Place the ghee in a large bowl and rub with ice cubes until it turns pale. Remove the ice cubes and add the chickpea flour. Mix well to form a crumbly mix. Add the cold milk and mix well.

Step 2 of 4

Pour in 750ml of chilled water and the lemon juice and mix well to form a smooth, runny batter. Place the sugar in a large saucepan and add 120ml of water, bring to the boil, reduce the heat and simmer for 10-12 minutes until it reaches a syrup consistency.

Step 3 of 4

Heat the oil in a large, wide saucepan to 180°C. Carefully drop in a ladleful of batter from a height. Make a hole in the middle with a spoon and add another layer of batter on top after 15 seconds. Repeat, making a hole in the middle each time. 2-3 times until you have desired thickness and remove with a slotted spoon. Repeat with the remaining batter to make several ghervars.

Step 4 of 4

Drain the ghervars on kitchen paper. Pour sugar syrup on top of each and sprinkle with mixed dry fruit.
