- 750grams fresh cherries, pitted (plus extra cherries to serve)
- 250grams spreadable cream cheese, at room temperature
- 1/2 cup caster sugar
- 600milliliter thickened cream
- 395milliliter sweetened condensed milk

Method
Step 1 of 3
Place pitted cherries into a saucepan with caster sugar. Stir over a medium heat until sugar dissolves and the cherries soften. Remove from heat and allow to cool. Transfer to a food processor and pulse until cherries are roughly chopped.
Step 2 of 3
Place cream into a large bowl. Using an electric beater, beat until soft peaks form. Add cream cheese and condensed milk. Beat until smooth and combined.
Step 3 of 3
Fold cherry mixture through cream mixture. Transfer to a 8-cup capacity loaf pan or airtight container. Freeze overnight. Serve.
