Description
This creamy, dairy free rice pudding is delicious with sweet lychees and toasted almonds.
Method
Step 1 of 2
Add the rice, milk, spices and vanilla extract to a large, heavy bottomed saucepan and bring to the boil. Reduce the heat and simmer for 25 minutes, stirring occasionally, until the rice is cooked through.
Step 2 of 2
Heat the figs with the sugar and orange zest in a large pan on medium heat. Cook for 4-5 minutes until the figs are tender. Serve the rice pudding with figs on top.
