  • 220grams arborio rice
  • 3 1/3 cup almond milk, unsweetened
  • 1/4teaspoons almond extract
  • 4tablespoons honey, divided
  • 1teaspoons vanilla extract
  • 100grams lychees, tinned, sliced
  • 4tablespoons flaked almonds, toasted

Description

This creamy, dairy free rice pudding is delicious with sweet lychees and toasted almonds.

Method

Step 1 of 2

Add the rice, almond milk and extracts to a large, heavy bottomed saucepan and bring to the boil. Reduce the heat and simmer for 25 minutes, stirring occasionally, until the rice is cooked through. Stir in half of the honey.

Step 2 of 2

Divide between 4 bowls, top with lychees, honey and toasted almonds and serve.
