  • 100grams arborio rice
  • 3 cups almond milk, unsweetened
  • 1 cup soy cream
  • 4tablespoons honey
  • 1/2teaspoons almond extract
  • 2teaspoons vanilla
  • 4tablespoons flaked almonds, toasted

Description

Almond extract and toasted almonds give this dairy free rice pudding lots of flavour.

Method

Step 1 of 3

Pre-heat the oven to 120°C/100°C fan-forced. Mix the rice, milk, soy cream, honey, vanilla and almond extract together and tip in to an ovenproof dish.

Step 2 of 3

Bake for 30 minutes, stir and bake for another 30 minutes. Remove from the oven and leave to stand for 10 minutes to finish thickening up.

Step 3 of 3

While the pudding is cooling, spread the almonds on a baking sheet and place in the oven for 10 minutes to toast. Serve the rice pudding with toasted almonds scattered on top.
