  • 2tablespoons dark rum
  • 1 1/4 cups milk
  • 800grams bread, torn (white or brioche)
  • 2 eggs
  • 60grams cherries
  • 50grams pine nuts

Description

This maltese style bread pudding has deep smokey flavours with sour cherries.

Method

Step 1 of 7

Pre-heat your oven to 190°C/170°C fan-forced.

Step 2 of 7

Lightly butter a casserole dish or large loaf tin and set to one side.

Step 3 of 7

In a mixing bowl, combine the butter, cocoa, sugar and cinnamon together.

Step 4 of 7

Add the rum and then crack in the eggs and combine fully.

Step 5 of 7

Add the milk to the mixture with the cherries, pine nuts and 2 tablespoons of the juice from the cherries.

Step 6 of 7

Tear up your bread and place in your baking dish and now pour your mixture evenly over the torn bread and allow to soak for 10 minutes.

Step 7 of 7

Flatten your mixture and then place into the oven and bake for 60 minutes. Allow to cool slightly before serving.
