For the pickled cabbage
  • 1/2 head red cabbage, shredded
  • 3tablespoons olive oil
  • 1 medium lemon, juice only
  • 1teaspoons caster sugar
  • 4 pita bread
  • 4 chicken breasts
  • 1 pinch salt
  • 1 medium red onion, peeled and sliced
  • 1/2 cup chicken stock
  • 1 sprig coriander, for garnish

Description

A succulent chicken kebab dish is enhanced by the tang of pickled red cabbage

Method

Step 1 of 4

Add the shredded cabbage to a bowl with the lemon, oil and sugar and allow to marinate for 4 hours.

Step 2 of 4

Cook the chicken breasts on skillet on a medium heat for 10 minutes, turning half way. Now add the chicken stock to the skillet and cover and allow to cook for a further 10 minutes.

Step 3 of 4

Remove the chicken from the skillet and pull apart using forks. Cook for a further few minutes if not cooked fully through. Leave the shredded chicken to one side.

Step 4 of 4

Heat up the pita bread under the grill for 1 minute and then slice open. Serve the shredded chicken with the sliced onion, drained pickled cabbage stuffed inside the pita.
