For the pickled onion
  • 2 medium red onion, peeled and sliced
  • 1/4 cup water
  • 1/4 cup rice wine vinegar
  • 2tablespoons sugar
  • 250grams lamb mince
  • 4 pita bread
  • 150grams yoghurt
  • 2tablespoons coriander, chopped
  • 1teaspoons mint, chopped
  • 1teaspoons chilli flakes
  • 1/2teaspoons cumin
  • 1teaspoons garam masala
  • 1 cloves garlic, peeled and chopped

Description

Packed full of spice and flavour, these lamb kebabs make for a tasty and wholesome dinner.

Method

Step 1 of 4

Place the chopped onion in a bowl with the water, vinegar and sugar and leave to pickle for 4 hours. Combine the chopped mint with the yoghurt in a separate bowl and set to one side.

Step 2 of 4

In another bowl, combine the mince with the leftover spices and combine fully.

Step 3 of 4

Now prepare the mince mix by shaping into 12 small balls roughly 1.5 inch in size. Now chargrill the balls on a medium heat for 8 minutes while turning occasionally and then set to one side.

Step 4 of 4

Warm up the pita breads for 1 minute on the chargrill and then slice open. Stuff the warm pita with the spiced lamb balls, drained pickled onions and spread the mint yoghurt to serve.
