For the raita
- 1 medium red onion, peeled and diced
- 30grams coriander, diced
- 10grams mint, diced
- 1/2 cup yoghurt
- 2 medium chicken breasts, butterfly cut in half
- 1teaspoons paprika
- 1tablespoons lemon juice
- 2tablespoons olive oil
- 4 pita bread
- 50grams rocket, washed
- 2 medium tomatoes, chopped

Description
A simple chargrill chicken kebab is complimented by a chunky and refreshing raita.
Method
Step 1 of 3
Combine the yoghurt with the chopped onion, coriander and mint, leave to one side. Marinade the chicken in the paprika, lemon juice and olive oil and leave to one side for 30 minutes to marinade.
Step 2 of 3
Chargrill the sliced chicken for 3 minutes on each side or until cooked fully through and set aside.
Step 3 of 3
Heat up the pita breads for 1 minutes and then slice open. Stuff the pita with the chicken, rocket, tomatoes. Serve with riata.
