  • 125grams butter, at room temperature
  • 4 veal t-bones
  • 2teaspoons worcestershire sauce
  • 2tablespoons French dressing (to serve)
  • 20grams parmesan cheese, shaved
  • 1 pinch pepper (for seasoning)
  • 120grams baby rocket
  • 750grams small potatoes
  • 1/4 cup sage leaves, finely chopped
  • 1 pinch salt (to taste)

Method

Step 1 of 5

Combine butter, sage, Worcestershire sauce, salt and white pepper in a bowl.

Step 2 of 5

Spoon butter mixture onto a piece of baking paper. Form into a sausage shape and roll in paper. Refrigerate until firm.

Put potatoes into a saucepan and cover with cold water. Bring to the boil over a high heat. Reduce heat to medium and simmer for 12-15 minutes or until tender. Drain.

Step 4 of 5

Heat a chargrill pan or BBQ hotplate over a medium heat. Season steaks on both sides. When pan is hot, add 2 steaks and cook for 3 minutes on each side for medium-rare or until cooked to your liking. Transfer to a plate and cover to keep warm. Cook remaining steaks. Serve steaks with steamed potatoes and rocket & parmesan salad.

To make salad, combine rocket and parmesan in a large bowl. Drizzle with dressing just before serving.
