- 600grams Greek-style yoghurt
- 2 medium tomato, cut into wedges
- 2 capsicum, cut into large chunks
- 2 Lebanese cucumber, diced
- 1 bunch parsley, chopped
- 4 large mushrooms, cut into quarters
- 2 zucchini, thickly sliced
- 1 lemon, juiced
- 1teaspoons olive oil
- 2 clove garlic, minced
- 12 bamboo skewers, soaked in water for one hour
- 4 wholemeal pita, cut into triangles
- 260grams lamb loin, cut into small cubes
Method
Step 1 of 5
Preheat a barbecue or grill pan on high heat and oven to 180°C.

To make the pita dippers, place pita on a baking tray and bake for 5 minutes or until crisp.

To make tzatziki, combine yoghurt, cucumber, garlic, parsley and lemon juice in a serving bowl. Refrigerate until ready to serve.

Place lamb, zucchini, mushroom, capsicum and tomato in dishes and allow diners to assemble their own skewers. Drizzle skewers with oil and grill on all sides for 4 minutes or until cooked to your liking.

Serve skewers with wholemeal pita dippers and tzatziki.
