  • 1 bunch broccolini, trimmed
  • 1 1/2tablespoons honey
  • 1/3 cup balsamic vinegar
  • 160grams mixed leaf rocket salad mix
  • 1/3 cup Parmesan cheese, grated
  • 1 1/2tablespoons olive oil
  • 4 skinless chicken thigh fillets

Method

Step 1 of 4

Heat 2 tsp oil in a large frying pan over high heat. Season chicken. Add to pan and cook for 3 minutes on each side or until golden brown.

Step 2 of 4

Add vinegar and honey to pan and stir to combine. Reduce heat to medium and simmer for 5 minutes or until sauce reduces to a thick syrup and chicken is cooked through.

Step 3 of 4

Meanwhile, heat a medium frying pan or chargrill pan over high heat. Toss broccolini in 2 tsp oil and season. Cook for 2-3 minutes, turning once, or until lightly charred.

Step 4 of 4

Toss salad mix with remaining oil. Slice chicken and serve with salad and broccolini topped with parmesan and drizzled with pan juices.
