  • 1 cloves garlic, crushed
  • 2tablespoons coriander, chopped
  • 200grams seedless grapes, halved
  • 2tablespoons mint, chopped
  • 2tablespoons continental parsley, chopped
  • 2 chicken breast fillets
  • 1teaspoons ground cumin
  • 2 lemon, 1/4 cup juiced
  • 1 1/2 cup chicken stock, hot
  • 1 1/2 cup organic couscous
  • 1tablespoons olive oil
  • 1/4 cup pistachios, chopped

Try our delicious chicken & couscous salad, it's the perfect light meal or side dish for any occasion. Enjoy this great salad that you're bound to love.

Method

Step 1 of 6

Combine 1 tbs of lemon juice, oil and cumin in a bowl. Brush mixture over the chicken and set aside. Preheat a chargrill pan or barbecue on medium-high heat.

In a saucepan heat chicken stock until it starts simmering.

Step 3 of 6

Place the couscous into a large bowl and pour over the hot stock. Stir well. Cover and stand for 5 minutes.

Step 4 of 6

Meanwhile, add chicken to the heated chargrill and cook for about 6 minutes each side until golden and cooked through. Transfer to a plate. Cover with foil.

Step 5 of 6

Fluff couscous with a fork. Add herbs, garlic, grapes, pistachio and remaining lemon juice to couscous. Season.

Step 6 of 6

Divide couscous salad among serving plates. Top with sliced chicken. Serve.
