  • 120grams baby spinach leaves
  • 1 sweet potato
  • 1/4 cup corn kernels
  • 1 small onion
  • 1tablespoons apple cider vinegar
  • 1/2tablespoons red wine vinegar
  • 1/4teaspoons sriracha sauce
  • 2tablespoons olive oil
  • 1teaspoons dijon mustard

Description

Who doesn't love cheese? It's one of my favorite things, so of course, I make a MEAN halloumi salad! Give it a try.

Method

Step 1 of 6

Cut sweet potato into rounds and bake until soften but not mushy. Meanwhile bake onion at the same time (onion should be sliced).

Step 2 of 6

Defrost corn and cook in the microwave for 30 seconds, leaving a lid on to allow to steam.

Step 3 of 6

Cut and fry Halloumi Cheese.

Step 4 of 6

Prepare baby spinach and place into the bowl ready to be topped.

Step 5 of 6

Prepare dressing by mixing mustard, oil, vinegars and chili sauce. Taste and adjust flavours as you please.

Step 6 of 6

Top spinach with corn, sweet potato, onion and finally the cheese before dressing and tossing.
