  • 2 pkts woolworths cooked basmati rice 2 x 250 gram packs
  • 6 fresh dates, cut in half
  • 1packets fresh blackberries
  • 1 cup green grapes
  • 1/2 cup feta cheese, in fine dice
  • 6 fresh whole dates, torn up
  • 1 pomegranate, cut up
  • 6tablespoons olives, sliced
  • 4tablespoons dried tomatoes, shredded
  • 8tablespoons greek style yoghurt
  • 1/4 cup fresh parsley, chopped
  • 1 cup chicken, diced, cooked (or prawns)
  • 1teaspoons sumac
  • 1/2 purple onion, diced fine
  • 1/4 cup cooked chickpeas
  • 150grams halloumi, sliced and cooked
  • 4 feta bell peppers, cut in half

Description

Simple but yum add your favourites.

Method

Step 1 of 4

Mix the sumac and yoghurt together, add to the cooked diced prawns or chicken. Put into the fridge.

Step 2 of 4

Heat the rice in the microwave, following the instructions. Allow to cool.

Step 3 of 4

Place the rice onto a large platter. The photo below is another way to serve the salad.

Then sprinkle alternatively all the other ingredients including the chicken or prawns marinated in the sumac yoghurt. This recipe is just a base idea you could add so many items to make it your own, like, BBQ lamb, you could flavour the rice with fried onions, a hint of chilli, shallots, BBQ seafood. Also you can add more or less of any of the ingredients. Enjoy.
