  • 2 red onions, cut into wedges
  • 1/4 cup parsley, chopped
  • 3teaspoons honey
  • 2tablespoons white wine vinegar
  • 1-2tablespoons olive oil
  • 1/3 cup pecans, chopped
  • 2 cup brown rice

Method

Step 1 of 4

Preheat oven to 200° C.

Step 2 of 4

Cook 2 cups brown rice in boiling water for 30 minutes until tender. Drain and rinse in cold water. Cool.

Step 3 of 4

Meanwhile, cut peeled pumpkin into 2cm cubes. Peel and cut red onions into wedges. Place into a baking pan and drizzle with 1-2 tbs olive oil. Roast for 25 minutes until tender and golden.

Step 4 of 4

Stir parsley and pecans into cooked rice. Whisk olive oil with white wine vinegar and honey. Add to rice mixture with pumpkin and onion. Toss gently. Transfer to a serving bowl. Serve.
