  • 100grams snow peas, trimmed, shredded
  • 150grams cherry tomatoes, halved
  • 1tablespoons lemon juice
  • 1/4 cup pecans, chopped
  • 1 cup brown rice
  • 1/4 cup olive oil
  • 1/4 cup unsalted roasted cashews, chopped
  • 40grams wild rice

Description

Try our summer rice salad for a delicious, light, and fresh meal. this easy-to-make salad is sure to be a hit. It's perfect for a summer lunch or dinner.

Method

Step 1 of 6

Cook the brown rice and wild rice in separate saucepans according to packet instructions. Drain. Cool completely.

Step 2 of 6

Blanch snow peas and green beans. Drain. Plunge into iced water. Drain well.

Step 3 of 6

Toss brown rice and wild rice together in a large bowl. Stir in peas, beans, tomato, capsicum, herbs and nuts.

Step 4 of 6

Whisk together the oil and lemon juice. Pour over the salad and gently fold through to combine.

Step 5 of 6

Baby: To make as a mash, omit wild rice, capsicum, mint and nuts and reduce oil to 2 tbs. Blend green veg, brown rice, tomato, parsley and 1/4 cup grated tasty cheese. Stir in 1/4 cup boiled cooled water. Makes 12 baby serves.

Step 6 of 6

Toddler: Omit ingredients as for baby version. Mix green veg, brown rice, tomato, parsley and 2 tbs oil in a large bowl. Makes 8 toddler serves.
