  • 2tablespoons fish sauce
  • 1/2 red capsicum, finely sliced
  • 1 small red chilli, finely chopped
  • 2tablespoons fresh coriander (to serve)
  • 2tablespoons mint leaves (to serve)
  • 1/2 small naturally sweet pineapple, peeled, diced
  • 100grams snow peas, trimmed, sliced
  • 4 spring onions, sliced
  • 1 handful kaffir lime leaves, spine removed, finely shredded
  • 2 lime wedges, cut into wedges (save 4 wedges to serve)
  • 1tablespoons caster sugar
  • 1/4 cup lime juice
  • 4 cup medium grain white rice, cooled
  • 2 cup cooked chicken, diced, cooled

Method

Step 1 of 3

Place rice into a bowl. Whisk lime juice, fish sauce and sugar together. Add lime leaves and chilli.

Step 2 of 3

Pour over rice and toss through with a fork. Add chicken, pineapple, snow peas, spring onion and capsicum.

Step 3 of 3

Spoon into bowls. garnish with herbs. Serve with lime wedges.
