- 1/2 cup fresh coriander, including stalks, chopped
- 1 large onion diced
- 2 vine ripened tomatoes, roughly chopped (or cherry tomatoes halved)
- 1/2teaspoons dried chilli flakes
- 2teaspoons ground coriander
- 2teaspoons ground cumin
- 2-3teaspoons Ayam Light Soy Sauce (or to taste)
- 2tablespoons olive oil (or 25g of butter)
- 1-2 clove garlic, peeled and chopped finely
- 1-2 cup brown rice, cooked
- 1 pinch sea salt ground (to taste)
- 425grams tinned tuna, drained thoroughly and flaked

Method
Step 1 of 3
Precook rice using a rice cooker or the absorption method on your stovetop (instructions are on the bag).
Step 2 of 3
Heat oil or butter, ground cumin and coriander until spices are fragrant and foaming. Add garlic, onion, salt and chilli and sauté until onions are tender. Add tuna and rice. Fold to combine and heat through.
Step 3 of 3
Turn heat off then add tomatoes, fresh coriander and soy. Mix until combined and serve warm.
