  • 2 medium zucchini, peeled into ribbons
  • 200grams creme fraiche
  • 2 medium lemons, juice and zest
  • 2 cloves garlic, peeled and minced
  • 400grams fettuccine

Description

This simple prawn pasta dish is an easy midweek dinner option, ready in 20 minutes.

Method

Step 1 of 3

Bring a pot of water to the boil and cook the fettuccine according to pack instructions and drain, reserving 200ml of starchy water.

Step 2 of 3

Heat the oil in a large pan on medium heat and cook the zucchinis for 2 minutes. Stir in the garlic and cook for 1 minute.

Step 3 of 3

Add the prawns to the pan and cook for 3-4 minutes until cooked through. Stir in the pasta. Remove from the heat, add the creme fraiche, lemon juice and zest and enough pasta water to loosen and serve.
