  • 1tablespoons olive oil
  • 1 onion, finely chopped
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 3 cloves garlic, grated or finely chopped
  • 400grams chopped tomatoes
  • 350grams linguine
  • 350grams cooked mixed seafood, such as prawns, squid, and mussels
  • 1 handful fresh flat-leaf parsley, finely chopped

Method

Step 1 of 3

Heat the oil in a large frying pan, add the onion and a pinch of salt, and cook over a low heat for 5 minutes or until soft and translucent. Stir in the garlic and cook for a few seconds more. Add the tomatoes, bring to the boil, then simmer gently for 10-12 minutes.

Step 2 of 3

Meanwhile, cook the pasta in a large pan of boiling salted water for 8 minutes, or until it is cooked but still has a bit of bite to it. Drain, keeping back a tiny amount of the cooking water. Return the pasta to the pan and toss together.

Step 3 of 3

Stir the seafood into the tomato mixture for the last few minutes of cooking. Season well with salt and black pepper, stir in the parsley, then toss with the pasta.
