- 500grams cod, skinless
- 6tablespoons olive oil, divided
- 2 cloves garlic, peeled and minced
- 2tablespoons capers, drained
- 60grams black olives, pitted and chopped
- 400grams chopped tomatoes
- 300grams linguine
- 3tablespoons parsley, fresh, chopped
- 1/2 lemon, zest
Description
You can use any white fish you like in this simple but tasty pasta puttanesca dish.
Method
Step 1 of 3
Brush the cod fillets with oil, place skin side down on a lined baking tray and cook under a hot grill for 8-10 minutes. Set aside.
Step 2 of 3
Heat the oil in a large pan on medium high heat and cook the garlic for 2 minutes. Stir in the capers and olives, pour over the chopped tomatoes and a tin of water and simmer for 10 minutes.
Step 3 of 3
Cook the linguine according to pack instructions, drain well and tip into the pan with the sauce. Flake the cod and add to the pan along with the parsley and lemon zest, toss well and serve.
