  • 1tablespoons olive oil
  • 3 medium spring onions, sliced
  • 3 cloves garlic, peeled and minced
  • 70grams creme fraiche
  • 1 medium lemon, juice and zest
  • 100grams rocket, light
  • 400grams fettuccine
  • 200grams oak smoked salmon, torn
  • 50grams parmesan, grated

Description

Rich smoked salmon and peppery rocket work perfectly together in this quick fettuccine dish.

Method

Step 1 of 3

Bring a pot of water to the boil and cook the fettuccine according to pack instructions and drain, reserving a couple of tablespoons of starchy water.

Step 2 of 3

Heat the oil in a large pan on medium heat and cook the spring onions for 3-4 minutes, add the garlic and cook for 1-2 minutes. Stir in the lemon zest and juice, rocket and creme fraiche and cook for 1-2 minutes.

Step 3 of 3

Tip the fettuccine into the pan and toss to coat, adding starchy water as necessary. Stir in the smoked salmon, top with parmesan and serve with extra lemon juice, if desired.
