  • 1/3 cup olive oil
  • 4 cloves garlic, peeled, whole
  • 350grams linguine
  • 2 medium red chillies, deseeded, finely diced
  • 8 anchovies, drained and chopped
  • 1/2 bunch parsley, fresh, chopped
  • 1 large lemon, juice and zest
  • 40grams parmesan, grated
  • 1 pinch cracked black pepper

Description

This simple Italian classic is like sunshine in a bowl with zingy lemon, chilli and rich anchovy.

Method

Step 1 of 3

In a pan on low heat, gently heat the oil with the garlic and anchovies for 2-3 minutes. Remove from the heat and leave to infuse for 10 minutes.

Step 2 of 3

Bring a large pan of water to the boil and cook the linguine according to pack instructions. Drain and reserve 100ml of starchy water.

Step 3 of 3

Remove the garlic from the oil and add the linguine. Tip in the lemon zest, chilli, parsley and lemon juice and zest. Add a couple of tablespoons of starchy water to loosen. Stir through the parmesan and serve with cracked black pepper.
