  • 2 cloves garlic, crushed
  • 500grams green prawns, peeled, deveined
  • 250grams cherry tomatoes, halved
  • 1 lemon, juiced and rind grated
  • 40grams baby rocket
  • 80grams feta, crumbled
  • 1 pinch black pepper (to season)
  • 400grams linguine pasta
  • 1tablespoons olive oil
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 3

Cook linguine pasta following packet instructions. Drain and keep warm in ovenproof dish with a lid.

Meanwhile, heat olive oil in a frying pan, crushed garlic cloves and peeled, deveined green prawns. Stir over medium-high heat for 5 minutes until prawns have changed colour.

Step 3 of 3

Add halved cherry tomatoes, baby rocket, crumbled feta and the juice and grated rind of 1 lemon. Season with salt and pepper. Toss well. Divide the pasta between plates and top with prawn mixture. Serve.
