Method
Step 1 of 6
Preheat oven to 200°C.
Step 2 of 6
Grease and line a 20cm deep cake pan with baking paper.
Step 3 of 6
Melt butter in a saucepan over medium heat. Add flour and stir until smooth. Cook for 1-2 minutes or until bubbly. Remove from heat and add milk, whisking constantly, until smooth. Return to heat and bring to boil. Add half the cheese. Stir until melted. Remove from heat.

Line base of prepared pan with one-third of potatoes, overlapping slightly. Cover with one-third of the sauce. Repeat twice more. Sprinkle remaining cheese over top layer.
Step 5 of 6
Bake for 1 hour or until golden and potatoes are tender.

Stand for 10 minutes before cutting into wedges.
