  • 2 cloves garlic, finely chopped
  • 300milliliter pure cream
  • 1tablespoons horseradish cream
  • 1tablespoons Dijon mustard
  • 1/4 bunch thyme, leaves picked

Method

Step 1 of 3

Preheat oven to 220°C/200C fan-forced. Grease a 20cm (7cm deep) square baking dish.

Step 2 of 3

Arrange potato, vertically, into rows to fill baking dish. Place onion in and around potato. Scatter over garlic. Whisk cream, horseradish, mustard and half the thyme in a jug. Pour cream mixture over potato.

Step 3 of 3

Cover with foil and bake for 1 hour. Remove foil and bake for a further 25 minutes or until the potato is golden brown and tender. Stand for 10 minutes. Sprinkle with remaining thyme. Serve.
