- 440grams wok-ready rice noodles
- 150grams broccoli florets
- 500grams pork stir-fry strips
- 100grams san choy bow stir-fry sauce
- 2tablespoons Thai chilli jam stir-fry paste
- 150grams shredded carrot
- 120grams baby spinach leaves
- 1/3 cup fried shallots
- 1/3 cup unsalted roasted cashews
- 1tablespoons vegetable oil
Description
Make a meal in a flash with this pork and vermicelli noodle stir-fry with cashews, carrot, spinach and fried shallots.
Method
Step 1 of 4
Place noodles and broccoli in a large heatproof bowl. Cover with boiling water. Stand for 2 minutes or until noodles are tender and broccoli is bright green. Drain.
Step 2 of 4
Meanwhile, heat oil in a large non-stick frying pan or wok over medium-high heat. Add pork and stir-fry for 2 minutes or until browned and almost cooked through.
Step 3 of 4
Add sauce and paste to pork, then stir-fry for 2 minutes or until well combined and sauce mixture boils.
Step 4 of 4
Add noodles, broccoli, carrot and spinach to pan and stir-fry for 2 minutes or until spinach is just wilted. Spoon into serving bowls. Serve sprinkled with shallots and cashews.
