Thai-style Minced Pork With Noodles

- 1tablespoons vegetable oil
- 675grams pork mince
- 4 cloves garlic, grated or finely chopped
- 1 pinch salt
- 2 fresh hot red chillies, deseeded and finely chopped
- 1 lime, juice only
- 1-2tablespoons Thai fish sauce
- 1-2tablespoons dark soy sauce
- 1 handful fresh coriander, finely chopped
- 1 medium rice noodles (to serve)
Method
Step 1 of 3
Heat the oil in a wok or large frying pan over a medium-high heat. Add the pork, garlic, and a pinch of salt. Stir-fry until no longer pink, tossing continuously.
Step 2 of 3
Add the chillies, lime juice, fish sauce, and soy sauce, and stir-fry for a further 5 minutes.
Step 3 of 3
When ready to serve, sprinkle over the coriander, and stir well. Serve hot with noodles or rice.
